Marshmallow Treats
Low-fat treats made with whole-grain eats
It’s true: Marshmallows are not much more than sugar. But, unlike a lot of candy, they’re also low in fat, and these days, vegetarian versions (which use agar instead of gelatin) are more readily available than ever.
• For babies under 12 months, melt marshmallows with a little butter and stir in your baby’s favorite whole-grain O’s cereal. Use your fingers to clump the sticky cereal mix into age-appropriate bites—even if it’s just two O’s—and cool on wax paper. Older kids love these, too! For babies who are 1 year and older, add peanut butter, chopped nuts, or dark chocolate chips, and cut into hand-held bars.
• For finger-food savvy kids over 12-months, melt some chocolate chips in a double boiler (or fit a heat-resistant bowl over a pot of boiling water and stir the chips constantly till melted). Then dip marshmallows in the melted chocolate and roll in toasted coconut or chopped nuts. Put your chocolate-covered marshmallows in the fridge so the coating hardens. Just keep in mind that whole marshmallows - even mini ones - are only for finger-food savvy kids over 12 months.
