Calabacitas for the Whole FamBy Cheryl TallmanThis delicious Southwestern recipe is great for the whole family, including babies 8 months and older. Ingredients3-4 medium zucchini, diced1 large onion, diced3 ears fresh sweet corn or 1-1/2 cups of frozen corn or canned corn, rinsed and drained1 10-oz can black beans2 Tbsp olive oil½ cup cheddar cheese, shreddedSprinkle of chili powder, optionalSalt and fresh pepper, to tasteDirections • Rinse the back beans in a colander under cold water for 1 minute. • Remove husks from corn and cut kernels off cobs. • In a large sauté pan, heat olive oil over medium heat. Add onions, corn and zucchini and sauté until zucchini and onion have softened, about 5-6 minutes.• Reduce heat to low, gently stir in black beans and heat for about 1-2 minutes. • Remove a portion of the mixture from the pan to puree for your baby. When pureeing, add a little bit of water to make texture smooth. • To the remaining mixture (for toddlers and adults), add salt and pepper to taste; sprinkle lightly with chili powder and spread cheddar cheese evenly over the top. Cover pan and continue to heat for about 1 minute, until the cheese is melted. • Serve immediately; small portions can be frozen for future meals.
