Butternut Squash with Honey, Lemon & Parmesan

Nothing sets a celebratory mood like holiday cooking. But with so much to make in so little time, things can get stressful. Family friendly dishes like (like the one below) that satisfy hungry tots and adults alike are the key to stress-free entertaining. 

This versatile dish can be served hot, warm or at room temperature, and makes great leftovers!

Serves 4

Ingredients


20 oz butternut squash, peeled & cut


1/4 c honey**
**NOTE: Children under 12 months should NOT eat honey. Substitute agave syrup for honey in all portions served to children under 1-year-old.


Juice of 1/2 a lemon**
**NOTE: Children under 12 months should NOT eat  citrus. Substitute  lemon zest (which is safe in small quantities) for lemon juice in all portions served to children under 1-year-old.


1/4 tsp salt


1 tbsp butter


1/4 c grated parmesan

Directions


1. Steam squash until cooked through. 

2. Place cooked squash and all other ingredients in a food processor. Process until smooth. (You can also mash this by hand, as you would potatoes.)
